Saint Patrick’s Day is just 48-hours away and I have an awesome looking selection of keto-friendly GREEN recipes for you to try!
We all know that this particular holiday seems to be primarily about the alcohol, lol! So, I’ll include some fun libation options, too. But I scoured the web for some of (what I feel are) the best Irish-style recipes you can enjoy while sticking to your ketogenic lifestyle.
BREAKFAST
Number 1. Start your day off right with a hearty, Saint Patrick’s Day breakfast! This one from Dot2Trot’s Low Carb Living looks amazing! Changes I would make at our house would be: The Eggs – I would flip them over in the pan to make sure the whites are solid. And I’d have to crack the yolk for Jeff, who does NOT like runny eggs at all. Second, rather than Chorizo, I think I would go the extra mile and make my own, more traditional Irish sausages! After a little research I discovered the Irish tend to really love their blood sausages and black (blood) puddings. Ya, no. That’s NOT going to work for Jeff…and honestly, wouldn’t be my first choice, either. Instead, I think I’d try this yummy-looking recipe by Melissa at Simply Whisked for Homemade Irish Sausage with Onion Stout Gravy. I would adapt it to be more low-carb by substituting almond flour for the panko bread crumbs. Go ahead and use the lard because that’s fine for your keto diet! If you wanted to take this dish up a notch and serve it as a full meal for dinner, you could always add the recipe for Low Carb Colcannon, below!
Number 2. What could be more Irish than Corned Beef Hash? This quick recipe by Steve at Serious Keto looks easy and delicious! He chooses turnips instead of the typical potato in his hash and I’m super curious to try that to see how it tastes! From the look of things, he definitely approves. ๐
ENTREES
Number 3. Irish Stew – I really enjoyed watching this recipe video by Chef John at Food Wishes. Though, to make this recipe more keto-friendly I recommend changing it up a bit, as follows: remove the potatoes, carrots, and wheat flour. Replace the potatoes with turnips or whole radishes, the carrots with thick-sliced or whole mushrooms, and the flour with almond or coconut flour. You can keep the rest of the recipe exactly the same and will wind up with a beautiful, savory, delicious low-carb version of this traditional Saint Patrick’s Day meal.
SIDE DISHES
Number 4. What would Saint Patrick’s Day be without some fabulous Irish Soda Bread? This recipe by The Sugar Free Mom looks fantastic, quick, and easy. Perfect. If you want a loaf, instead, you could easily skip the muffin tin and opt for shaping the dough into a single round that you bake in a greased cast-iron frying pan or on a baking sheet in the oven. *Personally, I would skip the currants or raisins in order to make this recipe extra keto-friendly.
Number 5. You’ve probably heard of Colcannon before, but do you know what it is? Traditionally, it’s mashed potatoes with sauteed cabbage and onions mixed in. This low-carb version by Isabelle at Wellness With Isabelle substitutes cauliflower and her recipe looks delicious! She offers both animal and vegan options in her recipe.
DESSERTS
